Vegetable Paratha
Ingredients
- Wheat flour - 2 cups
- Carrot - 1 cup(grated)
- Cabbage -1 cup(grated)
- Cauliflower -1 cup(grated)
- Bottle gourd(lauki) - 1 cup(grated)
- Capsicum - 1 cup (grated)
- Potatoes - 2 (boiled)
- Cumin seeds - 1 tsp
- Black peppercorns -1 tsp
- Cumin powder - 1/2 tsp
- Red chilli powder - 1 tsp
- Turmeric powder - 1/4 tsp
- Amchur powder - 1 tsp
- Water as per required
- Salt to taste
- Oil
Method
Take flour. salt, oil in a bowl. add enough water and knead into a soft doughkeep aside for 30 minutes
Dry roasted cumin seeds and black pepper in a small pan for 2 minutes. Cool and crush with a rolling pin and keep aside.
Heat oil in another frying pan. Add carrot, cabbage, Cauliflower and gourd and sauté for 6-8 minutes. Add the cumin, dried mango powder, red chilli powder, turmeric powder, salt and capsicum and mix well. Sauté for 1-2 minutes. Transfer mixture to a bowl. Add mashed potato and Crushed masala and mix well. Let cool.
Divide the dough into equal portions and shape each portion into a ball. Moreover shape each ball into a katori and stuff vegetable mixture inside. Seal the edges and shape it into a ball again. Sprinkle with a little flour and roll dry in a paratha.
Heat a tawa, Place it on the tawa paratha and cook for one minute. Apply a little oil and flip. Apply a little oil on the other side too, and cook until both sides golden and browned.
Serve hot with Pickle or Curd
