Aloo Paratha
Ingredients:
- Wheat flour - 2 1/4 cups
- Ghee or Oil - as per required
- salt to taste
- potatoes - 5 (boiled)
- Cumin seeds -1tsp
- Onions - 1/2 cup (chopped)
- Green chillies -4 to 5
- salt to taste
- Chilli powder -1/2 tsp
- Coriander leaves
- Amchur powder -2 tsp
Method:
- Combine the wheat flour, ghee and salt in a bowl and mix well.Add enough water and knead into a semi-stiff dough. Keep aside.
- Heat the ghee or Oil in a broad non-stick pan or Tawa and add the cumin seeds. When the seeds crackle, add the onions and saute on a medium flame for 1 to 2 minutes.
- Add the green chilies, mix well and saute on a medium flame for 1 minute.Then Add the boiled potatoes, salt, chilly powder, coriander, dry mango powder, mix well and cook on a medium flame for 1 to 2 minutes, while stirring continuously.
- Divide the stuffing into equal portions and keep aside.
- Divide dough into equal portions and roll a portion of dough into a circle.Place a little filling in the center of the circle.
- Gather all the sides in the center and close tightly.Roll again in a circle with a little flour.
- Heat a non-stick tava (griddle) and cook the paratha with a little ghee until golden brown spots appear on both sides.
- Repeat with the remaining dough and stuffing to more than 11 parathas.
Serve immediately with fresh curd.
