- Maida - 2 cups
- Onions - 3 large (chopped)
- Cumin seeds - 1tsp
- Asafoetida - pinch
- Garlic - 6 cloves
- Ginger - 1 inch piece
- Green chillies - 3
- Red chilli powder -1 tsp
- Coriander powder - 2tsp
- Garam masala-1tsp
- salt to taste
- Water as per required
Take maida flour, salt and oil in a bowl,add enough water and knead to a soft dough.Cover the dough with a wet muslin cloth and keep aside for 20 minutes.
Heat oil in a pan. Add cumin seeds and asafoetida. When the cumin seeds begin to change colour and Add chopped onions, salt and continue to sauté. When onions are lightly browned add chopped garlic, ginger, green chillies and red chilli powder,garam masala, coriander powder, Mix well and sauté for a minute.Remove from heat. Set aside to cool.Divide the filling into equal portions.
Divide the dough into equal portions. Roll each portion and press to make puris.
Place one portion of the filling in the centre.Bring together all the sides, seal it tightly and remove any excess dough.
Gently roll the filled kachori again into circle, while ensuring that the filling does not spill out,press the centre of the kachori with your thumb.
Heat oil in a kadai and deep fry the kachoris in medium hot oil till crisp and golden. Drain and place them on absorbent paper.
